- Bring the soup to a boil, reduce heat to low, and simmer for 2-3 hours.
- Cook the Chinese noodles according to package instructions and divide them among four bowls.
- Ladle the soup over the noodles and serve hot.
Scallion Pancakes
Ingredients
- 2 cups all-purpose flour
- 1 cup hot water
- 4 green onions, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon salt
Instructions
- In a large bowl, combine the flour and hot water. Knead the dough until it is smooth and elastic.
- Divide the dough into four pieces and roll each piece into a thin circle.
- Brush each circle with vegetable oil and sprinkle the green onions and salt on top.
- Roll each circle into a tight spiral and then flatten it into a pancake shape.
- Heat a pan over medium heat and add a small amount of oil.
- Cook each pancake for 2-3 minutes on each side, until crispy and golden brown.
- Serve the pancakes hot with soy sauce for dipping.
