Ingredients:
- 2 cups Maseca corn flour
- 1 1/4 cups warm water
- 1/2 tsp salt
Instructions:
1. In a mixing bowl, combine the Maseca and salt.
2. Slowly add the warm water, about 1/4 cup at a time, while mixing the dough with your hands. Keep adding water until the dough is soft and pliable, but not too sticky. The dough should be similar in texture to play-dough.
3. Knead the dough for a few minutes until it's smooth and no longer sticky. If it's too dry, add a bit more water. If it's too wet, add a sprinkle of Maseca.
4. Cover the dough with a damp cloth and let it rest for at least 10 minutes.
5. Preheat a large skillet or griddle over medium heat.
6. Divide the dough into 12 equal portions (or more if you want smaller tortillas).
7. Roll each portion into a ball and flatten it into a disc shape with your hand or a tortilla press. Dust each flattened piece with additional Maseca to prevent it from sticking to your work surface.
8. Cook each tortilla on the skillet or griddle for about 30 seconds on each side, or until lightly browned and cooked through. Use a spatula to flip them over carefully.
9. Serve immediately, or store in a plastic bag in the refrigerator (they'll stay fresh for up to a week).
