Tamale Pie
First, preheat your oven to 375 degrees F. Then, in a large skillet, cook 1 lb of ground beef until browned. Drain any excess fat and set aside.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (4 oz) diced green chilies, undrained
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup masa harina (corn flour)
- 1/2 cup vegetable oil
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups chicken broth
Instructions:
- In the same skillet, sauté 1 chopped onion and 1 chopped green bell pepper until tender.
- Add 1 can of corn, 1 can of black beans, 1 can of diced tomatoes, 1 can of green chilies, 1 tsp of garlic powder, 1 tsp of chili powder, and salt and pepper to taste. Stir to combine.
- Add the browned ground beef to the skillet and mix well.
- Sprinkle 1 cup of shredded cheddar cheese and 1 cup of shredded mozzarella cheese over the beef mixture.
- In a separate bowl, mix 1 cup of masa harina, 1/2 cup of vegetable oil, 1 tsp of baking powder, 1/2 tsp of salt, and 1 1/4 cups of chicken broth together to form a batter.
- Pour the batter over the cheese and spread it evenly.
- Bake the Tamale Pie for 30-40 minutes or until the crust is golden brown and the cheese is melted and bubbling.
If you want to make this recipe vegan, you can use a vegan ground beef substitute and omit the cheese or use vegan cheese instead. It will still taste delicious!
