Yeehaw Mirepoix Soup
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 bay leaf
- Salt and pepper, to taste
- Heat olive oil and butter in a large pot over medium heat.
- Add diced onion, carrot, and celery to the pot and sauté until they begin to soften, about 5-7 minutes.
- Add chicken broth and bay leaf to the pot and bring to a boil.
- Reduce heat to low and let simmer for about 15-20 minutes, or until the vegetables are tender.
- Remove bay leaf and season with salt and pepper to taste.
- Blend soup with an immersion blender, or transfer to a blender and blend until smooth.
- Serve hot and enjoy!
Sassy Mirepoix Stew
- 1 tablespoon olive oil
- 1 onion, diced

- 1 pound beef stew meat
- 4 cups beef broth
- 1 bay leaf
- Salt and pepper, to taste
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Add beef stew meat to the pot and brown on all sides, about 5-7 minutes.
- Remove the meat from the pot and set it aside.
- Add diced onion, carrot, and celery to the pot and sauté until they begin to soften, about 5-7 minutes.
- Return the beef to the pot and add beef broth and bay leaf.
- Bring to a boil, then reduce heat to low and let simmer for about 2 hours, or until the meat is tender.
- Remove bay leaf and season with salt and pepper to taste.
- Serve hot and enjoy!
