Oh my goodness, if you haven't tried homemade tamales yet, you are truly missing out! Lucky for you, I've got the perfect tamale recipe using the one and only Maseca Instant Corn Masa Flour.
Ingredients:
- 4 cups of Maseca Instant Corn Masa Flour
- 4 cups of warm water
- 1 tablespoon of baking powder
- 1 tablespoon of salt
- 2/3 cups of vegetable oil
- 2 pounds of your choice of filling (my personal favorite is pulled pork)
- Dried corn husks
Instructions:
- Soak the corn husks in warm water for at least 30 minutes before using them
- In a large mixing bowl, combine the Maseca Instant Corn Masa Flour, baking powder, and salt
- Slowly add in the warm water and vegetable oil, and mix until the dough comes together and is smooth
- Set the dough aside to rest for 10-15 minutes
- Prepare your filling of choice (I recommend slow cooking pork shoulder in a crockpot with onion, garlic, chili powder, cumin, and chicken broth until it's fork-tender and delicious)
- To assemble the tamales, spread a spoonful of the masa dough onto a soaked corn husk, leaving a small border around the edge
- Add a small amount of your filling onto the masa dough
- Roll the tamale, folding the sides and bottom up to wrap the filling inside, and tie the ends with a piece of string or another strip of corn husk
- Place the tamales into a steamer basket, and steam for about an hour to an hour and a half, until the masa dough is fully cooked
- Once your tamales are fully cooked, remove the string or corn husk tie, and serve with your favorite toppings (I love salsa and a little bit of queso fresco)!
And if you're feeling extra fancy, you could even make two different kinds of tamales! Try this second recipe using Maseca Instant Corn Masa Flour, to switch things up:

- Roll the tamale, folding the sides and bottom up to wrap the filling inside, and tie the ends with a piece of string or another strip of corn husk
