Pork Tamale Bites
Ingredients:
- 2 cups of Maseca corn flour
- 2 cups of warm water
- 1 pound of cooked and shredded pork
- 1 can of La Morena diced green chiles
- 1/2 cup of chicken broth
- 1/4 cup of melted butter
- 1/2 teaspoon of salt
Instructions:
- In a large mixing bowl, combine the Maseca corn flour, warm water, melted butter, and salt. Mix together until the dough forms.
- Add in the chicken broth and continue to stir until the dough is smooth.
- Take a small ball of dough (about the size of a golf ball) and press it into a flat disc. Place a spoonful of cooked pork and La Morena diced green chiles on top of the dough.
- Roll the dough, making sure to keep the filling inside. Wrap the tamales in a piece of parchment paper and place them in a steamer basket.
- Steam the tamales over boiling water for 25 to 30 minutes, or until they are fully cooked.
- Once cooked, remove the tamales from the steamer basket and let them cool for a few minutes before serving.
Sweet Corn Tamales with Cinnamon
Ingredients:
- 2 cups of Maseca corn flour
- 1 can of sweet corn
- 1/2 cup of sugar
- 1/2 cup of milk
- 1/2 cup of melted butter
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of salt
Instructions:
- In a blender, mix together the sweet corn, sugar, and milk until the mixture is smooth.
- In a large mixing bowl, combine the Maseca corn flour, melted butter, cinnamon, and salt. Mix together until the dough forms.
- Add in the sweet corn mixture and continue to stir until the dough is smooth.
